Ingredients
- 2 cups pecan halves (toasted if you like extra flavor!)
- 1 (11 oz) bag soft caramels (about 35-40 pieces), unwrapped
- 2 tablespoons heavy cream
- 1½ cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or vegetable oil (optional, for smoother chocolate)
Instructions
- Prepare your tray
Line a baking sheet with parchment or wax paper. - Arrange pecans
Make small clusters of 3–4 pecan halves on the sheet, spaced out. - Melt the caramel
In a microwave-safe bowl, combine caramels and heavy cream. Microwave in 30-second intervals, stirring each time, until smooth and melted. - Add caramel to pecans
Spoon a small amount of melted caramel over each pecan cluster, just enough to stick them together. Let them sit for 10–15 minutes to firm up slightly. - Melt the chocolate
Melt chocolate chips (and coconut oil, if using) in a microwave-safe bowl in 20-30 second intervals, stirring until smooth. - Top with chocolate
Spoon melted chocolate over each cluster, covering the caramel. Use the back of a spoon to smooth it out. - Set the clusters
Let them cool at room temp or pop them in the fridge for 15–20 minutes until set. - Enjoy!
Once firm, peel off the paper and devour your homemade turtle clusters!
