- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- For the chocolate ganache:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 1 tablespoon unsalted butter
Instructions
- Prepare the Cake Layers:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat the sugar, eggs, milk, oil, and vanilla extract until smooth. Gradually add the dry ingredients to the wet mixture, mixing until well combined.
- Slowly stir in the boiling water (batter will be thin). Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Make the Peanut Butter Filling:
- In a large mixing bowl, beat the peanut butter and softened butter together until smooth and creamy.
- Gradually add powdered sugar, heavy cream, and vanilla extract, beating until the filling is light and fluffy. Set aside.
- Prepare the Chocolate Ganache:
- Heat the heavy cream in a small saucepan until just simmering. Remove from heat and pour over the chocolate chips and butter in a bowl. Let sit for 2-3 minutes, then stir until smooth and glossy.
- Assemble the Cake:
- Once the cakes are fully cooled, spread a thick layer of peanut butter filling on top of one cake layer.
- Place the second cake layer on top and press gently.
- Pour the chocolate ganache over the top of the cake, letting it drip down the sides for a smooth finish.
- Chill and Serve:
- Allow the cake to set in the refrigerator for at least 30 minutes to firm up the ganache.
- Slice and enjoy your delicious chocolate peanut cake!
