Instructions
- In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract until smooth and creamy.
- Gradually mix in powdered sugar until the mixture forms a thick dough.
- Shape the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Freeze the balls for about 20–30 minutes until firm.
- In a microwave-safe bowl, melt chocolate chips with shortening or coconut oil in 20–30 second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate, coating evenly, then place back on the parchment.
- Chill in the refrigerator until the chocolate is set.
- Store in an airtight container in the fridge or freezer until ready to serve.
