Chocolate Ganache Cake with Cream Recipe

This decadent cake combines a rich chocolate cake with a smooth and luscious ganache frosting and a light and airy whipped cream topping.

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt  
  • 1 cup milk
  • 1 cup buttermilk  
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract  
  • 1 cup hot coffee (brewed)

For the Ganache Frosting:

  • 12 ounces semisweet chocolate, chopped
  • 1 cup heavy cream

For the Whipped Cream Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract  

Instructions:

1. Prepare the Cake:

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.  
  • In a separate bowl, whisk together milk, buttermilk, oil, vanilla extract, and hot coffee.  
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  • Divide the batter evenly between the prepared cake pans.  
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto wire racks to cool completely.  

2. Make the Ganache Frosting:

  • Place the chopped chocolate in a heatproof bowl.
  • In a saucepan, heat the heavy cream over medium heat until it simmers.
  • Pour the hot cream over the chocolate and let it stand for 5 minutes.
  • Gently stir the mixture until smooth and creamy.
  • Let the ganache cool slightly before frosting the cake.

3. Assemble the Cake:

  • Once the cakes are completely cool, level them if necessary.
  • Place one cake layer on a serving plate.
  • Spread a generous layer of ganache frosting over the top of the first layer.
  • Top with the second cake layer.
  • Frost the entire cake with the remaining ganache.

4. Make the Whipped Cream Topping:

  • In a chilled bowl, beat the heavy cream with an electric mixer until soft peaks form.
  • Gradually add powdered sugar and vanilla extract, beating until stiff peaks form.

5. Decorate the Cake:

  • Spread the whipped cream topping over the ganache frosting.
  • Decorate the cake with chocolate shavings, sprinkles, or fresh berries.
