Chocolate Fudge Layered Cake recipe

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Fudge Frosting:

  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ½ cup heavy cream
  • 2 tsp vanilla extract
  • Pinch of salt

For the Ganache (optional drizzle):

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

1️⃣ Preheat & Prep:
Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

2️⃣ Make the Cake Batter:
In a large bowl, whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat until smooth. Slowly stir in boiling water (batter will be thin — that’s okay!).

3️⃣ Bake:
Divide batter evenly between pans. Bake for 30-35 minutes or until a toothpick comes out clean. Cool completely.

4️⃣ Prepare the Fudge Frosting:
Beat butter until creamy. Slowly add powdered sugar and cocoa powder. Pour in heavy cream, vanilla, and salt — beat until fluffy and smooth.

5️⃣ Assemble the Cake:
Place one cake layer on a plate. Spread a generous layer of frosting. Add the second cake layer, then frost the top and sides.

6️⃣ Optional Ganache Drizzle:
Heat heavy cream until simmering. Pour over chocolate chips and stir until smooth. Let cool slightly, then drizzle over cake for that extra fudgy finish.

7️⃣ Serve:
Slice, serve, and enjoy every rich, chocolatey bite!
