Ingredients
For the Brownie Base:
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
For the Strawberry Layer:
- 1 cup fresh strawberries, hulled and finely chopped
- 1 tbsp sugar (optional, depending on sweetness of berries)
- 1 tbsp cornstarch
- 1 tsp lemon juice
For the Chocolate Topping:
- 1/2 cup semi-sweet chocolate chips
- 1 tbsp butter or coconut oil
Instructions
- Prepare the Brownies:
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix melted butter and sugar until smooth. Add eggs and vanilla, mixing well.
- Stir in cocoa powder, flour, salt, and baking powder. Mix until combined.
- Pour batter into the prepared pan and bake for 20–25 minutes or until a toothpick comes out with moist crumbs.
- Let the brownies cool completely.
- Make the Strawberry Layer:
- In a small saucepan over medium heat, combine chopped strawberries, sugar (if using), lemon juice, and cornstarch.
- Cook while stirring until the mixture thickens and looks glossy, about 5–7 minutes.
- Spread the strawberry mixture evenly over the cooled brownies. Refrigerate to set (about 15–20 minutes).
- Prepare the Chocolate Topping:
- Melt chocolate chips and butter (or coconut oil) in a microwave-safe bowl in 30-second bursts, stirring until smooth.
- Pour and spread the melted chocolate over the strawberry layer. Chill until the topping is set (about 30 minutes).
- Serve:
- Slice into squares and enjoy your chocolate-covered strawberry brownies!
