Chocolate Covered Almond Cookies Recipe

These rich and decadent cookies are the perfect blend of sweet and nutty. The almond flavor shines through, complemented by the dark chocolate coating. They’re perfect for gifting or indulging in yourself.

Ingredients:

  • For the Cookies:
    • 1 cup (2 sticks) unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 2 1/4 cups all-purpose flour  
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup almond flour
    • 1/2 cup sliced almonds
  • For the Chocolate Coating:
    • 1 cup dark chocolate chips
    • 1 tablespoon coconut oil

Instructions:

  1. Make the Cookie Dough:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • In a large bowl, cream together the butter and sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.  
    • In a separate bowl, whisk together the all-purpose flour, baking powder, salt, almond flour, and sliced almonds.  
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
    • Bake for 10-12 minutes, or until golden brown.
    • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.  
  2. Make the Chocolate Coating:
    • Melt the dark chocolate chips and coconut oil together in a double boiler or in a microwave-safe bowl in 30-second intervals, stirring after each interval.
  3. Dip the Cookies:
    • Once the cookies are completely cooled, dip each cookie halfway into the melted chocolate.
    • Place the dipped cookies on a parchment-lined baking sheet.
    • Let the chocolate set, then store the cookies in an airtight container at room temperature.

Tips:

  • For a nuttier flavor, increase the amount of almond flour.
  • You can use milk chocolate or white chocolate chips for a different flavor profile.
  • For a more intense chocolate flavor, use high-quality dark chocolate with a high cocoa content.
  • To prevent the cookies from spreading too much, chill the dough for 30 minutes before baking.
