Ingredients
For the cake:
- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the frosting:
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder
- ½ teaspoon salt
- 2 teaspoons vanilla extract
- 4 tablespoons heavy cream (add more if needed)
Instructions
- Preheat and prepare:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line with parchment paper. - Mix dry ingredients:
In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together. - Add wet ingredients:
Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined. - Add boiling water:
Slowly stir in the boiling water — the batter will be thin, but that’s okay! - Bake:
Divide batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool for 10 minutes, then remove from pans and cool completely. - Make the frosting:
Beat softened butter until creamy. Add powdered sugar, cocoa powder, salt, and vanilla. Beat until smooth, adding heavy cream a tablespoon at a time until it reaches a fluffy, spreadable consistency. - Assemble:
Place one cake layer on a serving plate. Spread frosting evenly on top. Add the second layer and frost the top and sides. - Serve:
