Ingredients:
- 1 and 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 and 1/2 tsp baking powder
- 1 and 1/2 tsp baking soda
- 1 tsp salt
- 2 cups granulated sugar
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water (or hot coffee for deeper flavor)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
- Combine dry ingredients: In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Mix wet ingredients: In another bowl, beat the sugar, eggs, milk, oil, and vanilla extract until well combined.
- Add dry to wet: Slowly add the dry ingredients into the wet mixture, beating on medium speed until smooth.
- Add hot water: Gradually stir in the boiling water (or coffee). The batter will be thin, but this is normal.
- Bake: Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Frost and serve: Once cooled, frost with your favorite chocolate frosting and enjoy!
