Ingredients:

  • For the Cake:
    • 1 ¾ cups all-purpose flour
    • 2 cups granulated sugar
    • ¾ cup unsweetened cocoa powder
    • 1 ½ teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 cup buttermilk
    • ½ cup vegetable oil
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 1 cup hot brewed coffee
  • For the Frosting:
    • 1 cup (2 sticks) unsalted butter, softened
    • 3-4 cups powdered sugar
    • ¼ cup unsweetened cocoa powder
    • ¼ cup milk
    • 1 teaspoon vanilla extract

Instructions:

Prepare the Cake:

  1. Preheat Oven: Set your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla extract.
  4. Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
  5. Add Coffee: Stir in the hot coffee.
  6. Bake: Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the cakes cool in the pans for 10 minutes before inverting onto wire racks to cool completely.

Prepare the Frosting:

  1. Cream Butter and Sugar: In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  2. Add Cocoa and Milk: Gradually beat in the cocoa powder and milk, alternating until combined.
  3. Add Vanilla: Beat in the vanilla extract.

Assemble the Cake:

  1. Level Cakes: Once the cakes are completely cool, level them if necessary for a flat surface.
  2. Frost and Stack: Place one cake layer on a serving plate. Frost the top with a layer of frosting. Top with the second cake layer and frost the top and sides of the cake.

Enjoy!

Tips:

  • For a richer flavor, use high-quality dark chocolate cocoa powder.
  • To make a chocolate ganache frosting, heat heavy cream and chocolate chips together, then let it cool slightly before mixing with butter and powdered sugar.
  • For extra chocolatey goodness, add chocolate chips to the batter.
