Ingredients
- 1 and 3/4 cups (220g) all-purpose flour
- 3/4 cup (75g) unsweetened cocoa powder
- 2 cups (400g) granulated sugar
- 1 and 1/2 tsp baking powder
- 1 and 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
Optional for frosting:
- 1/2 cup (115g) butter
- 2/3 cup (65g) unsweetened cocoa powder
- 3 cups (360g) powdered sugar
- 1/3 cup (80ml) milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix dry ingredients: In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add wet ingredients: Beat in eggs, milk, oil, and vanilla until smooth.
- Add boiling water: Gradually mix in boiling water; batter will be thin, but that’s okay.
- Bake: Pour batter evenly into prepared pans. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frosting (optional):
- Melt butter in a saucepan, add cocoa and mix well.
- Remove from heat, add powdered sugar, milk, and vanilla. Stir until smooth.
- Spread frosting over cooled cake layers.
Tips
- Use high-quality cocoa powder for the best chocolate flavor.
- Adding boiling water helps the cake stay moist and soft.
- Make sure cakes are completely cool before frosting to prevent melting.
- For extra richness, brush a little coffee syrup on the cake layers before frosting.
