Instructions:
Prepare the Pans:
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
Make the Batter:
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk and hot coffee, beginning and ending with the dry ingredients. Mix until just combined.
Divide the Batter:
- Divide the batter in half.
- In one half, stir in the cocoa powder and hot coffee until well combined.
Bake the Cakes:
- Pour the vanilla batter into one prepared pan and the chocolate batter into the other.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting onto wire racks to cool completely.
Make the Frosting:
- In a large bowl, cream together the butter and powdered sugar until light and fluffy.
- Beat in the milk and vanilla extract until smooth.
- If desired, add food coloring and mix until combined.
Assemble the Cake:
- Once the cakes are completely cooled, level the tops if necessary.
- Place one cake layer on a serving plate.
- Frost the top of the cake layer.
- Place the second cake layer on top of the frosting.
- Frost the top and sides of the cake.
- Decorate as desired.
