Chocolate and Vanilla Cake Recipe

Ingredients:

For the Cake:

  • 2 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk  
  • 1 cup hot brewed coffee

For the Chocolate Layer:

  • ½ cup unsweetened cocoa powder
  • ¼ cup hot brewed coffee

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3-4 cups powdered sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions:

Prepare the Pans:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.

Make the Batter:

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.  
  3. Beat in the eggs one at a time, then stir in the vanilla extract.  
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk and hot coffee, beginning and ending with the dry ingredients. Mix until just combined.  

Divide the Batter:

  1. Divide the batter in half.
  2. In one half, stir in the cocoa powder and hot coffee until well combined.

Bake the Cakes:

  1. Pour the vanilla batter into one prepared pan and the chocolate batter into the other.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes before inverting onto wire racks to cool completely.

Make the Frosting:

  1. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  2. Beat in the milk and vanilla extract until smooth.
  3. If desired, add food coloring and mix until combined.

Assemble the Cake:

  1. Once the cakes are completely cooled, level the tops if necessary.
  2. Place one cake layer on a serving plate.
  3. Frost the top of the cake layer.
  4. Place the second cake layer on top of the frosting.
  5. Frost the top and sides of the cake.
  6. Decorate as desired.

Tips:

  • For a richer flavor, use high-quality cocoa powder.
  • To prevent the cake from drying out, wrap it tightly in plastic wrap and store it at room temperature.
  • For a more intense chocolate flavor, use dark chocolate cocoa powder.
  • You can use different flavors of cake and frosting to create unique combinations.
