CHOCKLATE PUDDING

Ingredients

  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 2 tbsp cornstarch
  • ¼ tsp salt
  • 3 oz dark chocolate, chopped
  • 1 tsp vanilla extract
  • Whipped cream (optional, for serving)

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. Slowly add milk and heavy cream, whisking constantly until smooth.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble (about 5-7 minutes).
  4. Remove from heat and stir in chopped dark chocolate and vanilla extract until smooth.
  5. Pour the pudding into serving dishes and let cool at room temperature for 10 minutes.
  6. Cover with plastic wrap (pressing it directly onto the pudding surface to prevent a skin from forming) and refrigerate for at least 2 hours.
  7. Serve chilled with whipped cream, if desired.
