- 2 cups all-purpose flour (plus extra for dusting)
- ¾ cup boiling water
- ½ teaspoon salt (optional)
- 1 tablespoon oil (optional – for softer dough)
Instructions
- In a large bowl, add the flour (and salt, if using).
- Slowly pour in the boiling water while stirring constantly with chopsticks or a wooden spoon. Be careful — it’s hot!
- Mix until a shaggy dough forms.
- Once it’s cool enough to handle, knead it with your hands for 8–10 minutes until smooth and elastic. Add a little more flour if it’s too sticky.
- Cover the dough with a damp cloth or plastic wrap and let it rest for 30 minutes.
- After resting, divide and roll it out into circles (for dumplings) or long strips (for noodles).
- Boil, steam, fry, or pan-cook them depending on your dish!
