Chicken Potato Rolls

Ingredients

  • 2 medium potatoes, boiled & mashed
  • 1 cup cooked chicken (shredded or finely chopped)
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (optional)
  • 2 tbsp fresh coriander leaves, chopped
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp red chili flakes
  • ½ tsp cumin powder
  • 1 tbsp lemon juice
  • 1 egg (for coating)
  • Bread crumbs (for coating)
  • Oil (for frying)

Instructions

  1. In a mixing bowl, combine the boiled & mashed potatoes, shredded chicken, onion, green chili, coriander, and all spices. Mix well until combined.
  2. Take a small portion of the mixture and shape it into rolls or oval cylinders.
  3. Beat the egg in a small bowl.
  4. Dip each roll in the beaten egg, then coat with breadcrumbs.
  5. Heat oil in a pan over medium flame. Fry the rolls until golden brown and crispy on all sides.
  6. Remove onto a paper towel to drain excess oil.
  7. Serve hot with ketchup, chili garlic sauce, or mint chutney.
