Chicken Parmesan Grilled Cheese Sandwich

INGREDIENTS

  • 2 slices of thick-cut bread (sourdough or Italian works great)
  • 1 cooked chicken breast (grilled, breaded, or rotisserie – sliced or shredded)
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter (softened)
  • 1/4 teaspoon garlic powder
  • Optional: fresh basil or parsley for garnish

INSTRUCTIONS

  1. Prep the Bread:
    In a small bowl, mix the softened butter with garlic powder. Spread this mixture on one side of each bread slice.
  2. Layer the Sandwich:
    Place one slice of bread, buttered side down, in a skillet over medium heat.
    • Add half of the mozzarella cheese.
    • Layer the sliced or shredded chicken on top.
    • Spoon marinara sauce evenly over the chicken.
    • Sprinkle Parmesan cheese.
    • Add the remaining mozzarella.
    • Top with the second bread slice, buttered side up.
  3. Grill the Sandwich:
    Cook until the bottom is golden brown (about 3–4 minutes), then carefully flip and grill the other side until golden and the cheese is melted.
  4. Serve:
    Remove from the skillet and let it rest for 1–2 minutes. Slice in half and garnish with fresh basil or parsley if desired.
