Chicken Parmesan Grilled Cheese Sandwich

Ingredients

  • 2 slices of sourdough or Italian bread
  • 1 cooked breaded chicken cutlet (store-bought or homemade)
  • ½ cup marinara sauce
  • ¼ cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 2 slices provolone or mozzarella cheese
  • 2 tbsp butter (softened)
  • 1 tsp garlic powder (optional)
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Prep the Bread:
    Spread softened butter on one side of each slice of bread. Sprinkle garlic powder on top of the butter for extra flavor (optional).
  2. Assemble the Sandwich:
    • Place one slice of bread butter-side down on a skillet or griddle.
    • Layer with one slice of provolone or mozzarella cheese.
    • Add the cooked chicken cutlet.
    • Spoon marinara sauce over the chicken.
    • Sprinkle shredded mozzarella and Parmesan cheese on top.
    • Top with another slice of provolone or mozzarella.
    • Close the sandwich with the second slice of bread, butter-side up.
  3. Grill It:
    Cook over medium heat until the bread is golden brown and crispy, and the cheese is melted—about 3–4 minutes per side. Press gently with a spatula while cooking for even toasting.
  4. Serve:
    Slice in half and serve warm. Garnish with fresh basil if desired.
