- 2 slices sourdough or Italian bread
- 2 tbsp butter, softened
- 1 cup cooked chicken breast, shredded or sliced
- ½ cup marinara sauce (plus extra for dipping)
- ½ cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- ½ tsp Italian seasoning
- Pinch of salt and pepper
- Fresh basil leaves (optional, for garnish)
INSTRUCTIONS
- Prep the bread: Spread butter evenly on one side of each bread slice. The buttered side will face outward when grilling.
- Assemble the filling: On the unbuttered side of one slice, layer half of the mozzarella cheese, the cooked chicken, marinara sauce, Parmesan cheese, Italian seasoning, and the remaining mozzarella cheese.
- Top it off: Place the second slice of bread on top, buttered side facing out.
- Grill: Heat a skillet or griddle over medium-low heat. Place the sandwich on the skillet and cook for 3–4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.
- Serve: Slice in half, garnish with fresh basil if desired, and serve with extra marinara sauce for dipping.
