Chicken Parmesan Grilled Cheese Sandwich

INGREDIENTS

  • 2 slices of thick bread (sourdough or Italian work well)
  • 1 cooked breaded chicken breast (store-bought or homemade), sliced
  • ½ cup marinara or pizza sauce
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 2 tbsp butter (softened)
  • 1 tsp Italian seasoning (optional)
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Prep the Bread:
    Butter one side of each slice of bread. Sprinkle a little Italian seasoning on the buttered side if desired.
  2. Assemble the Sandwich:
    Place one slice of bread, butter side down, on a skillet or pan. Layer with half the mozzarella, the sliced breaded chicken, marinara sauce, Parmesan, and the remaining mozzarella. Top with the second slice of bread, butter side up.
  3. Grill:
    Heat the skillet over medium heat. Cook the sandwich for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden and crispy and the cheese is melted.
  4. Serve:
    Slice in half, garnish with fresh basil if desired, and serve hot with extra marinara sauce for dipping.
