Chicken Parmesan Grilled Cheese Sandwich

Ingredients

  • 2 slices of thick-cut bread (sourdough, Italian, or your choice)
  • 1 cooked breaded chicken cutlet (or use chicken tenders)
  • ¼ cup marinara or pasta sauce (warmed)
  • 2 slices mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon butter (softened)
  • ½ teaspoon Italian seasoning (optional)
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Prepare the Bread:
    • Spread softened butter on one side of each slice of bread.
    • Sprinkle a little Italian seasoning on the buttered sides, if using.
  2. Assemble the Sandwich:
    • Place one slice of bread, buttered side down, in a skillet over medium heat.
    • Layer with 1 slice of mozzarella, the breaded chicken cutlet, spoonfuls of marinara sauce, Parmesan cheese, and the second slice of mozzarella.
    • Top with the second slice of bread, buttered side up.
  3. Grill It:
    • Cook for 3–5 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  4. Serve:
    • Remove from pan, let rest 1 minute, then slice in half.
    • Garnish with fresh basil or parsley if desired. Serve with extra marinara for dipping.
