Instructions

  1. Prepare Ingredients: If not already done, cook and dice the chicken. Dice the bell pepper and onion, and chop the spinach.
  2. Beat Eggs: In a bowl, beat the eggs with a fork or whisk until well combined. Season with a pinch of salt and pepper.
  3. Cook Vegetables: Heat the olive oil or butter in a non-stick skillet over medium heat. Add the bell pepper and onion, and cook for about 3-4 minutes until softened.
