Ingredients
- 1 kg chicken (bone-in, cut into medium pieces)
- 4 medium tomatoes (roughly chopped or peeled)
- 1 tbsp ginger-garlic paste
- 2–3 green chilies (slit or chopped)
- 1/2 cup plain yogurt
- 1 tsp red chili powder (adjust to taste)
- 1 tsp crushed red chili flakes
- 1 tsp coriander powder
- Salt to taste
- 1/2 tsp turmeric
- 1/2 cup oil (traditionally more is used, adjust as preferred)
- 1 tsp crushed black pepper
- 1 tsp garam masala
- Fresh coriander and julienned ginger (for garnish)
Instructions
- Heat oil in a karahi or deep pan over medium-high heat.
- Add chicken and sauté until it turns light golden.
- Add ginger-garlic paste and cook for a couple of minutes.
- Toss in chopped tomatoes, red chili powder, crushed chili, coriander powder, salt, and turmeric.
- Cook on medium-high until the tomatoes break down and oil separates (about 10–15 mins).
- Add yogurt and stir well. Cook until it thickens and the chicken is fully cooked.
- Sprinkle in crushed black pepper and garam masala. Mix well.
- Garnish with green chilies, julienned ginger, and fresh coriander.
