CHICKEN KARAHI RECIPE – RESTAURANT STYLE


Ingredients

  • 1 kg chicken (bone-in, cut into medium pieces)
  • 4 medium tomatoes (roughly chopped or peeled)
  • 1 tbsp ginger-garlic paste
  • 2–3 green chilies (slit or chopped)
  • 1/2 cup plain yogurt
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp crushed red chili flakes
  • 1 tsp coriander powder
  • Salt to taste
  • 1/2 tsp turmeric
  • 1/2 cup oil (traditionally more is used, adjust as preferred)
  • 1 tsp crushed black pepper
  • 1 tsp garam masala
  • Fresh coriander and julienned ginger (for garnish)

Instructions

  1. Heat oil in a karahi or deep pan over medium-high heat.
  2. Add chicken and sauté until it turns light golden.
  3. Add ginger-garlic paste and cook for a couple of minutes.
  4. Toss in chopped tomatoes, red chili powder, crushed chili, coriander powder, salt, and turmeric.
  5. Cook on medium-high until the tomatoes break down and oil separates (about 10–15 mins).
  6. Add yogurt and stir well. Cook until it thickens and the chicken is fully cooked.
  7. Sprinkle in crushed black pepper and garam masala. Mix well.
  8. Garnish with green chilies, julienned ginger, and fresh coriander.
