Ingredients:
- 1 pound chicken gizzards, cleaned
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt, or to taste
- 1/2 cup chicken broth (or water)
- Optional: 1 tablespoon soy sauce
- Optional: Fresh parsley, chopped, for garnish
Instructions:
- Prepare the Gizzards: Rinse the chicken gizzards under cold water and pat them dry with paper towels. If they have any tough membranes or connective tissue, trim them off.
- Sear the Gizzards: Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the gizzards and sear them on all sides until browned, about 5-7 minutes.
- Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Cook, stirring occasionally, until the onion is softened and translucent, about 3-5 minutes.
- Add Spices: Stir in the paprika, dried thyme, black pepper, and salt. Cook for another minute, allowing the spices to release their aroma.
- Braise the Gizzards: Pour in the chicken broth (or water) and the optional soy sauce. Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let the gizzards simmer for about 1 to 1.5 hours, or until they are tender. Stir occasionally and add more liquid if needed.
- Check for Tenderness: To check if the gizzards are done, pierce them with a fork. They should be tender and easily pierced.
- Adjust Seasoning: Taste the sauce and adjust the seasoning as needed. Add more salt, pepper, or other spices to your liking.
