Chicken Fried Rice recipe

Ingredients

  • 2 cups cooked rice (preferably cold, day-old rice)
  • 1 lb chicken breast or thighs, diced
  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (like peas, carrots, corn)
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 3–4 tablespoons soy sauce (to taste)
  • 1 tablespoon oyster sauce (optional for richness)
  • Salt & pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
  2. Add diced chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
  3. In the same pan, add a little more oil and scramble the beaten eggs. Once cooked, break into small pieces and set aside with the chicken.
  4. Add a bit more oil if needed and sauté the onion and garlic until fragrant (about 1 minute).
  5. Toss in the mixed vegetables and cook until just tender.
  6. Add the cooked rice, breaking up any clumps. Stir-fry for 2–3 minutes until heated through.
  7. Return the chicken and eggs to the pan. Add soy sauce and oyster sauce. Stir to coat everything evenly.
  8. Toss in green onions and stir everything together. Taste and adjust seasoning if needed.
  9. Serve hot and enjoy your homemade chicken fried rice!
