Ingredients
- 2 cups cooked rice (preferably cold, day-old rice)
- 1 lb chicken breast or thighs, diced
- 2 tablespoons vegetable oil (or sesame oil for extra flavor)
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (like peas, carrots, corn)
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1 small onion, diced
- 3–4 tablespoons soy sauce (to taste)
- 1 tablespoon oyster sauce (optional for richness)
- Salt & pepper to taste
Instructions
- Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
- Add diced chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
- In the same pan, add a little more oil and scramble the beaten eggs. Once cooked, break into small pieces and set aside with the chicken.
- Add a bit more oil if needed and sauté the onion and garlic until fragrant (about 1 minute).
- Toss in the mixed vegetables and cook until just tender.
- Add the cooked rice, breaking up any clumps. Stir-fry for 2–3 minutes until heated through.
- Return the chicken and eggs to the pan. Add soy sauce and oyster sauce. Stir to coat everything evenly.
- Toss in green onions and stir everything together. Taste and adjust seasoning if needed.
- Serve hot and enjoy your homemade chicken fried rice!
