Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup sour cream
- 1/2 cup fresh cilantro leaves, chopped
- 1 tsp lime juice
- 1/4 tsp ground cumin (optional)
Instructions
- Season the Chicken:
Pat chicken breasts dry with paper towels. Season both sides with salt and pepper. - Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 5–6 minutes per side, or until golden and cooked through. Remove and set aside. - Make the Sauce:
In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant. Stir in chicken broth and let it simmer for 2 minutes. - Creamy Goodness:
Add heavy cream, sour cream, cumin (if using), and lime juice. Stir and simmer for 3–4 minutes until slightly thickened. - Add Cilantro:
Stir in chopped cilantro. Taste and adjust seasoning with more salt or lime juice if needed. - Combine & Serve:
Return chicken to the skillet. Spoon sauce over the top and simmer for 1–2 minutes to heat through. Serve hot with rice, roasted veggies, or mashed potatoes.
