Chicken Biscuit Casserole Recipe

A comforting and easy-to-make casserole with tender chicken, creamy sauce, and fluffy biscuits.

Ingredients:

  • 2 cups cooked and shredded chicken (rotisserie chicken works great)
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1/2 cup milk or chicken broth
  • 1/2 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • 1 (16 ounce) package refrigerated biscuit dough (8 biscuits)
  • 2 tablespoons melted butter (optional, for brushing biscuits)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).  
  2. Prepare the Chicken Mixture: In a large bowl, combine the cooked shredded chicken, cream of chicken soup, milk or chicken broth, frozen mixed vegetables, thyme, black pepper, and salt. Stir until well combined.
  3. Assemble the Casserole: Pour the chicken mixture into an ungreased 8×8 inch or 9×9 inch baking dish.
  4. Prepare the Biscuits: Open the biscuit dough and separate the biscuits. If you prefer smaller biscuits, you can cut each biscuit in half. Arrange the biscuits evenly over the chicken mixture.
  5. Brush with Butter (Optional): If desired, brush the tops of the biscuits with melted butter for a golden-brown finish.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and the chicken mixture is bubbly.
  7. Cool and Serve: Let the casserole cool for a few minutes before serving.

Variations:

  • Cheese: Add shredded cheddar or mozzarella cheese to the chicken mixture or sprinkle it over the biscuits during the last few minutes of baking.
  • Vegetables: Use different vegetables, such as broccoli florets, green beans, or mushrooms.
  • Spices: Add other herbs and spices, such as garlic powder, onion powder, or paprika.  
  • Gravy: make your own gravy to add to the chicken mixture instead of the canned soup.
  • Homemade Biscuits: Use your favorite homemade biscuit recipe instead of refrigerated biscuits.
  • Onions and celery: Dice and saute some onions and celery before adding them to the chicken mixture.
