A comforting and easy-to-make casserole with tender chicken, creamy sauce, and fluffy biscuits.
Ingredients:
- 2 cups cooked and shredded chicken (rotisserie chicken works great)
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1/2 cup milk or chicken broth
- 1/2 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- 1 (16 ounce) package refrigerated biscuit dough (8 biscuits)
- 2 tablespoons melted butter (optional, for brushing biscuits)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Chicken Mixture: In a large bowl, combine the cooked shredded chicken, cream of chicken soup, milk or chicken broth, frozen mixed vegetables, thyme, black pepper, and salt. Stir until well combined.
- Assemble the Casserole: Pour the chicken mixture into an ungreased 8×8 inch or 9×9 inch baking dish.
- Prepare the Biscuits: Open the biscuit dough and separate the biscuits. If you prefer smaller biscuits, you can cut each biscuit in half. Arrange the biscuits evenly over the chicken mixture.
- Brush with Butter (Optional): If desired, brush the tops of the biscuits with melted butter for a golden-brown finish.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and the chicken mixture is bubbly.
- Cool and Serve: Let the casserole cool for a few minutes before serving.
Variations:
- Cheese: Add shredded cheddar or mozzarella cheese to the chicken mixture or sprinkle it over the biscuits during the last few minutes of baking.
- Vegetables: Use different vegetables, such as broccoli florets, green beans, or mushrooms.
- Spices: Add other herbs and spices, such as garlic powder, onion powder, or paprika.
- Gravy: make your own gravy to add to the chicken mixture instead of the canned soup.
- Homemade Biscuits: Use your favorite homemade biscuit recipe instead of refrigerated biscuits.
- Onions and celery: Dice and saute some onions and celery before adding them to the chicken mixture.
