Chicken and Potato Casserole Recipe

This hearty chicken and potato casserole is the ultimate comfort food. Packed with tender chicken, creamy potatoes, and a blend of flavorful herbs and cheese, it’s perfect for a family dinner or potluck. It’s easy to prepare and guaranteed to become a favorite!


Ingredients:

  • 4 medium potatoes, peeled and thinly sliced
  • 2 chicken breasts, cooked and shredded
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup milk or cream
  • 1/2 cup sour cream
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 1 tsp paprika
  • 1 tsp thyme (or other herbs of choice)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare Potatoes:
    In a large pot, bring water to a boil. Add sliced potatoes and parboil for 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.
  3. Sauté Chicken and Onions:
    Heat olive oil in a pan over medium heat. Sauté the diced onion and minced garlic until translucent. Add the cooked, shredded chicken and cook for an additional 2-3 minutes. Season with paprika, thyme, salt, and pepper.
  4. Make the Cream Sauce:
    In a small saucepan, melt the butter over medium heat. Stir in the flour to make a roux and cook for 1-2 minutes. Slowly whisk in the milk or cream, stirring constantly until the sauce thickens. Remove from heat and mix in sour cream. Season with salt and pepper to taste.
  5. Assemble the Casserole:
    Layer half of the potatoes at the bottom of the greased baking dish. Spread half of the chicken mixture on top of the potatoes. Pour half of the cream sauce evenly over the chicken. Sprinkle with cheddar and mozzarella cheese. Repeat the layers with the remaining potatoes, chicken, sauce, and cheese.
  6. Bake:
    Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the top is golden and bubbling.
  7. Serve:
    Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley if desired.
