Chicken and Potato Bake

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4 medium potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, garlic powder, onion powder, thyme, paprika, salt, and pepper. Spread the potatoes evenly in a baking dish.
  3. Season the chicken breasts with salt, pepper, and any extra seasonings you like. Place them on top of the potatoes in the dish.
  4. In a small bowl, whisk together the heavy cream and chicken broth. Pour this mixture evenly over the chicken and potatoes.
  5. Cover the baking dish with foil and bake for 35 minutes. After 35 minutes, remove the foil and bake for an additional 20 minutes or until the chicken is fully cooked and the potatoes are tender.
  6. Sprinkle the shredded cheese over the chicken and potatoes and return to the oven for another 5 minutes until the cheese is melted and bubbly.
