Chicken Adobo


Chicken Adobo is a classic Filipino dish known for its savory and tangy flavor. It features chicken marinated in vinegar, soy sauce, garlic, and spices, then simmered until tender. This one-pot meal is perfect for any occasion and pairs well with steamed rice.

Ingredients

  • 2 lbs chicken (bone-in, skin-on, cut into pieces)
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 1 onion, sliced
  • 1 head garlic, minced
  • 2-3 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon brown sugar (optional)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 cup water
  • Chopped green onions (for garnish, optional)

Instructions

  1. Marinate the Chicken:
  • In a large bowl, combine soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns.
  • Add the chicken pieces, making sure they are well coated. Cover and marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).
  1. Sear the Chicken:
  • Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  • Remove the chicken from the marinade (reserve the marinade) and add it to the pot. Sear the chicken until browned on all sides, about 5-7 minutes.
  1. Simmer:
  • Pour the reserved marinade over the chicken and add water. If using, stir in the brown sugar for a touch of sweetness.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the chicken is tender and cooked through.
  1. Adjust Seasoning:
  • Taste and adjust the seasoning with salt and pepper as needed. If you prefer a thicker sauce, uncover the pot and let it simmer for an additional 10-15 minutes.
  1. Serve:
  • Remove the bay leaves and discard them. Serve the Chicken Adobo hot, garnished with chopped green onions, alongside steamed rice.
