Ingredients
- 2 lbs chicken (bone-in, skin-on, cut into pieces)
- 1 cup soy sauce
- 1 cup white vinegar
- 1 onion, sliced
- 1 head garlic, minced
- 2-3 bay leaves
- 1 teaspoon black peppercorns
- 1 tablespoon brown sugar (optional)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 1 cup water
- Chopped green onions (for garnish, optional)
Instructions
- Marinate the Chicken:
- In a large bowl, combine soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns.
- Add the chicken pieces, making sure they are well coated. Cover and marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).
- Sear the Chicken:
- Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- Remove the chicken from the marinade (reserve the marinade) and add it to the pot. Sear the chicken until browned on all sides, about 5-7 minutes.
- Simmer:
- Pour the reserved marinade over the chicken and add water. If using, stir in the brown sugar for a touch of sweetness.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the chicken is tender and cooked through.
- Adjust Seasoning:
- Taste and adjust the seasoning with salt and pepper as needed. If you prefer a thicker sauce, uncover the pot and let it simmer for an additional 10-15 minutes.
- Serve:
- Remove the bay leaves and discard them. Serve the Chicken Adobo hot, garnished with chopped green onions, alongside steamed rice.
