Cherry Pie Bars

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional, but amazing)
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 (21 oz) can cherry pie filling
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla and almond extracts.
  4. In a separate bowl, whisk together flour and salt. Gradually add to the wet ingredients and mix until combined.
  5. Spread about 2/3 of the batter evenly in the bottom of the prepared baking dish.
  6. Spoon cherry pie filling evenly over the batter layer.
  7. Drop remaining batter by spoonfuls over the cherry layer — it won’t cover it completely, and that’s okay!
  8. Bake for 30–35 minutes, or until the top is golden brown and a toothpick comes out clean.
  9. Cool completely in the pan. Dust with powdered sugar before cutting into bars.

Let me know if you want a glaze drizzle, crust variation, or to turn this into a strawberry or blueberry version! 🍓🫐
