Cherry Pie Bars


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional, for extra flavor)
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 (21 oz) can cherry pie filling
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and almond extract if using.
  4. Gradually add the flour and salt to the wet ingredients, mixing until just combined.
  5. Spread about 2/3 of the batter evenly into the prepared baking dish.
  6. Spoon the cherry pie filling evenly over the batter.
  7. Drop the remaining batter by small spoonfuls over the cherry filling. It won’t cover completely — that’s okay!
  8. Bake for 30–35 minutes, or until the top is lightly golden and a toothpick inserted comes out clean.
  9. Allow to cool completely in the pan. Dust with powdered sugar if desired.
  10. Cut into bars, serve, and enjoy!
