- 1 box chocolate cake mix (or homemade chocolate sponge)
- 1 cup brewed strong coffee (cooled)
- 2 tbsp cherry liqueur (or cherry juice)
- 1 cup fresh or canned cherries (pitted & halved)
- 1 cup mascarpone cheese
- 1 cup heavy cream (chilled)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ¼ cup cocoa powder (for dusting)
- Chocolate shavings (for garnish)
Instructions
- Bake the Cake:
- Prepare the chocolate cake according to package directions (or bake homemade chocolate sponge).
- Let it cool completely, then slice into 2–3 layers.
- Prepare Coffee Syrup:
- Mix cooled coffee with cherry liqueur (or cherry juice).
- Lightly brush each cake layer with this mixture.
- Make Mascarpone Cream:
- In a bowl, whip mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
- Layer the Cake:
- Place one cake layer on a serving plate.
- Spread a layer of mascarpone cream.
- Add some cherries.
- Repeat with remaining cake layers.
- Top & Chill:
- Spread remaining mascarpone cream on top and sides.
- Dust generously with cocoa powder.
- Garnish with extra cherries and chocolate shavings.
- Refrigerate at least 4 hours or overnight for best flavor.
- Serve & Enjoy!
