Cherry Cheesecake Lush

Ingredients

  • 1 package (14 oz) graham crackers (or 2 cups graham cracker crumbs)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup granulated sugar

Cream Cheese Layer:

  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 tub (8 oz) whipped topping (like Cool Whip)

Pudding Layer:

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk

Topping:

  • 1 can (21 oz) cherry pie filling
  • Additional whipped topping for garnish (optional)

Instructions

  1. Prepare the crust:
Crush the graham crackers into fine crumbs. In a bowl, mix the crumbs with granulated sugar and melted butter until well combined. Press the mixture firmly into the bottom of a 9×13-inch baking dish. Place in the refrigerator to set while preparing the filling.
  2. Make the cream cheese layer:
In a medium bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Fold in the whipped topping until fully combined. Spread this mixture evenly over the crust.
  3. Make the pudding layer:
In another bowl, whisk together the instant pudding mix and cold milk until it thickens. Spread the pudding over the cream cheese layer.
  4. Add the cherry topping:
Carefully spoon the cherry pie filling evenly over the pudding layer.
  5. Chill:
Cover and refrigerate for at least 4 hours (or overnight) to allow the layers to set.
  6. Serve:
When ready to serve, garnish with additional whipped topping if desired. Cut into squares and enjoy!
