Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp sugar

Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour (optional, for structure)

Topping (optional):

  • Fresh berries
  • Whipped cream
  • Fruit compote or caramel drizzle

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Make the crust: In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press into the bottom of a springform pan. Bake for 10 minutes, then let it cool.
  3. Prepare the filling: In a large bowl, beat cream cheese until smooth. Add sugar and vanilla, and mix well. Add eggs one at a time, beating on low speed. Stir in sour cream and flour (if using).
  4. Pour filling into the crust. Smooth the top with a spatula.
  5. Bake for 50–60 minutes or until the center is almost set (it should still jiggle slightly).
  6. Cool completely, then refrigerate for at least 4 hours or overnight.
  7. Top and serve with your favorite toppings!
