This easy casserole is a delicious way to use up summer zucchini. It’s packed with flavor and perfect for a weeknight meal.
Ingredients:
- 2 pounds zucchini, sliced thinly
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Parmesan cheese
- 1/2 cup bread crumbs
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Sauté vegetables: In a large skillet, melt butter over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Make the sauce: Stir in flour and cook for 1 minute, stirring constantly. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Season and combine: Stir in salt, pepper, and nutmeg. Add zucchini, cheddar cheese, and Parmesan cheese. Stir to combine.
