Cheesy Zucchini Casserole Recipe

This easy casserole is a delicious way to use up summer zucchini. It’s packed with flavor and perfect for a weeknight meal.

Ingredients:

  • 2 pounds zucchini, sliced thinly
  • 1 onion, chopped
  • 2 cloves garlic, minced  
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup shredded cheddar cheese  
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup bread crumbs

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Sauté vegetables: In a large skillet, melt butter over medium heat. Add onion and garlic and cook until softened, about 5 minutes.  
  3. Make the sauce: Stir in flour and cook for 1 minute, stirring constantly. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  4. Season and combine: Stir in salt, pepper, and nutmeg. Add zucchini, cheddar cheese, and Parmesan cheese. Stir to combine.
  5. Bake: Pour the mixture into the prepared baking dish. Top with bread crumbs. Bake for 25-30 minutes, or until bubbly and golden brown.
  6. Serve: Let the casserole stand for a few minutes before serving. Enjoy!
