- 4 medium russet potatoes (washed, peeled if desired, and diced)
- 2 tbsp olive oil
- 1 lb ground beef (or ground turkey/chicken)
- 1 packet taco seasoning (or 2 tbsp homemade)
- ½ cup water
- 1 cup shredded cheddar cheese (or Mexican blend)
- ½ cup sour cream (for topping)
- ½ cup salsa (for topping)
- 2 green onions, sliced
- Fresh cilantro (optional)
Instructions
- Prepare the Potatoes
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 25–30 minutes, until crispy and golden, flipping halfway through.
- Cook the Taco Meat
- In a skillet over medium heat, cook ground beef until browned.
- Drain excess grease, then stir in taco seasoning and water.
- Simmer for 5 minutes until thickened.
- Assemble
- Place roasted potatoes on a serving plate or skillet.
- Top with taco meat, shredded cheese, sour cream, and salsa.
- Garnish with green onions and cilantro.
