Ingredients
- 4 medium russet potatoes, peeled and diced
- 1 lb (450g) ground beef or ground turkey
- 1 packet taco seasoning mix (or 2 tbsp homemade)
- 1/4 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup Monterey Jack cheese (optional)
- 1/4 cup sour cream (for topping)
- 1/4 cup diced green onions
- 1/4 cup chopped tomatoes (optional)
- 1 tbsp olive oil or butter
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss diced potatoes with olive oil, salt, and pepper.
- Spread potatoes evenly on a baking sheet and roast for 25–30 minutes or until golden and tender. Flip halfway through for even cooking.
- While potatoes bake, heat a skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spatula. Drain excess grease if needed.
- Add taco seasoning and 1/4 cup water. Stir well and simmer for 3–4 minutes until thickened.
- Once potatoes are done, transfer them to a baking dish.
- Spoon the taco meat evenly over the potatoes. Sprinkle with shredded cheeses.
- Return to oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
- Remove from oven and top with sour cream, green onions, and chopped tomatoes.
- Serve hot and enjoy!
