Cheesy Taco Potatoes

Ingredients

  • 4 medium russet potatoes, peeled and diced
  • 1 lb (450g) ground beef or ground turkey
  • 1 packet taco seasoning mix (or 2 tbsp homemade)
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup Monterey Jack cheese (optional)
  • 1/4 cup sour cream (for topping)
  • 1/4 cup diced green onions
  • 1/4 cup chopped tomatoes (optional)
  • 1 tbsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss diced potatoes with olive oil, salt, and pepper.
  3. Spread potatoes evenly on a baking sheet and roast for 25–30 minutes or until golden and tender. Flip halfway through for even cooking.
  4. While potatoes bake, heat a skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spatula. Drain excess grease if needed.
  5. Add taco seasoning and 1/4 cup water. Stir well and simmer for 3–4 minutes until thickened.
  6. Once potatoes are done, transfer them to a baking dish.
  7. Spoon the taco meat evenly over the potatoes. Sprinkle with shredded cheeses.
  8. Return to oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and top with sour cream, green onions, and chopped tomatoes.
  10. Serve hot and enjoy!
