Ingredients
- 4 medium russet potatoes, washed and diced
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning mix (or homemade)
- 1/4 cup water
- 1 1/2 cups shredded cheddar cheese (or Mexican blend)
- 1/2 cup sour cream (optional)
- 1/4 cup chopped green onions
- 1/2 cup diced tomatoes (optional)
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Prepare the potatoes: Toss the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and crispy.
- Cook the beef: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add seasoning: Stir in taco seasoning and 1/4 cup water. Let simmer for 5–7 minutes until thickened.
- Assemble: In a large baking dish or oven-safe skillet, combine roasted potatoes and seasoned beef. Sprinkle shredded cheese evenly over the top.
- Melt the cheese: Place under the broiler for 2–3 minutes or until the cheese is melted and bubbly.
- Garnish & serve: Top with sour cream, green onions, and diced tomatoes if using. Serve warm!
