Cheesy Taco Potatoes

Ingredients

  • 4 medium russet potatoes, peeled and diced
  • 1 lb (450g) ground beef or ground turkey
  • 1 small onion, chopped
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional toppings: sour cream, green onions, jalapeños, salsa, diced tomatoes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the potatoes: Toss the diced potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet lined with parchment paper. Bake for 30–35 minutes or until golden and tender, flipping halfway through.
  3. Cook the meat: In a skillet over medium heat, cook the ground beef and chopped onion until browned and fully cooked. Drain any excess grease.
  4. Season the meat: Add taco seasoning and water to the meat. Stir well and simmer for 3–4 minutes until the sauce thickens.
  5. Assemble: Transfer the baked potatoes into an oven-safe dish. Top with the seasoned taco meat and sprinkle evenly with cheddar and mozzarella cheese.
  6. Bake again: Return the dish to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
  7. Serve: Garnish with your favorite toppings like sour cream, green onions, or jalapeños. Serve warm.
