- 4 medium russet potatoes, peeled and diced
- 1 lb (450g) ground beef or ground turkey
- 1 small onion, chopped
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/4 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese (optional)
- 2 tbsp olive oil
- Salt and pepper, to taste
- Optional toppings: sour cream, green onions, jalapeños, salsa, diced tomatoes
Instructions
- Preheat oven to 400°F (200°C).
- Prepare the potatoes: Toss the diced potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet lined with parchment paper. Bake for 30–35 minutes or until golden and tender, flipping halfway through.
- Cook the meat: In a skillet over medium heat, cook the ground beef and chopped onion until browned and fully cooked. Drain any excess grease.
- Season the meat: Add taco seasoning and water to the meat. Stir well and simmer for 3–4 minutes until the sauce thickens.
- Assemble: Transfer the baked potatoes into an oven-safe dish. Top with the seasoned taco meat and sprinkle evenly with cheddar and mozzarella cheese.
- Bake again: Return the dish to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.
- Serve: Garnish with your favorite toppings like sour cream, green onions, or jalapeños. Serve warm.
