Cheesy Taco Cups Recipe

Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 1 cup shredded mozzarella cheese
  • 1 can (8 count) refrigerated biscuits OR wonton wrappers
  • 1/2 cup salsa (optional)
  • Sour cream, for serving (optional)
  • Chopped green onions or cilantro, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin.
  2. Cook Meat: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and water. Stir and simmer for 3-4 minutes until thickened. Remove from heat.
  3. Prepare Cups: Flatten each biscuit slightly and press into the muffin tin cups to form a cup shape. If using wonton wrappers, place 1 wrapper in each cup, pressing down gently.
  4. Fill Cups: Spoon a heaping tablespoon of the taco meat mixture into each cup. Top with a little salsa if using, then sprinkle shredded cheddar and mozzarella evenly on top.
  5. Bake: Bake for 12–15 minutes, or until the edges are golden brown and cheese is melted and bubbly.
  6. Serve: Let cool slightly, then remove from the muffin tin. Top with sour cream and garnish with green onions or cilantro if desired.

Enjoy!
