Cheesy Taco Cups Recipe

Ingredients

  • 1 lb ground beef or chicken (or a plant-based protein for a vegetarian option)
  • 1 packet taco seasoning mix (or homemade taco seasoning)
  • 1/2 cup water
  • 12 small flour tortillas (or corn tortillas, if preferred)
  • 1 cup shredded cheddar cheese (or a blend of cheeses)
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup fresh cilantro (optional)
  • Jalapeño slices (optional, for some heat)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Ground Meat: In a large skillet, cook the ground beef or chicken over medium heat until browned and cooked through. Drain any excess fat, then add the taco seasoning mix and water. Stir well and cook for another 5 minutes, or until the mixture thickens and is fully combined.
  3. Prepare the Tortillas: While the meat is cooking, spray a muffin tin with non-stick cooking spray. Cut the tortillas into circles that are slightly larger than the muffin cups, using a cookie cutter or a cup to measure. Gently press each tortilla into the muffin cups, forming little cups.
  4. Assemble the Taco Cups: Spoon a generous amount of the seasoned taco meat into each tortilla cup. Top with shredded cheese.
  5. Bake: Place the muffin tin in the preheated oven and bake for about 10-12 minutes, or until the tortillas are crispy and the cheese is melted and bubbly.
  6. Garnish and Serve: Once the taco cups are out of the oven, top each with a dollop of sour cream, salsa, chopped green onions, black olives, cilantro, and jalapeño slices for extra flavor.
  7. Enjoy: Serve the cheesy taco cups as an appetizer, snack, or dinner. Enjoy!
