Cheesy Stuffed Meatloaf Bites

Ingredients

  • 1 lb ground beef
  • ½ lb ground pork (optional, for extra flavor)
  • 1 cup breadcrumbs
  • ½ cup milk
  • 1 egg
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • ½ cup shredded cheddar cheese (or mozzarella)
  • ½ cup cubed cheese (cheddar, mozzarella, or pepper jack)
  • ½ cup ketchup (for topping)
  • 1 tbsp brown sugar (optional, for glaze)
  • 1 tsp mustard (optional, for glaze)

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) and grease a muffin tin or baking dish.
  2. Prepare Meat Mixture: In a large bowl, combine ground beef, ground pork (if using), breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, and Italian seasoning. Mix until well combined.
  3. Form Meatloaf Bites: Take a small portion of the mixture, flatten it in your palm, place a cube of cheese in the center, and wrap the meat around it, forming a ball. Repeat with the remaining mixture.
  4. Arrange & Bake: Place the meatloaf bites in the prepared muffin tin or baking dish. Bake for 15 minutes.
  5. Add Glaze: In a small bowl, mix ketchup, brown sugar, and mustard (if using). Brush the glaze over the meatloaf bites.
  6. Bake Again: Return to the oven and bake for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
