- 1 lb ground beef
- ½ lb ground pork (optional, for extra flavor)
- 1 cup breadcrumbs
- ½ cup milk
- 1 egg
- ½ cup finely chopped onion
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- ½ cup shredded cheddar cheese (or mozzarella)
- ½ cup cubed cheese (cheddar, mozzarella, or pepper jack)
- ½ cup ketchup (for topping)
- 1 tbsp brown sugar (optional, for glaze)
- 1 tsp mustard (optional, for glaze)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C) and grease a muffin tin or baking dish.
- Prepare Meat Mixture: In a large bowl, combine ground beef, ground pork (if using), breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, and Italian seasoning. Mix until well combined.
- Form Meatloaf Bites: Take a small portion of the mixture, flatten it in your palm, place a cube of cheese in the center, and wrap the meat around it, forming a ball. Repeat with the remaining mixture.
- Arrange & Bake: Place the meatloaf bites in the prepared muffin tin or baking dish. Bake for 15 minutes.
- Add Glaze: In a small bowl, mix ketchup, brown sugar, and mustard (if using). Brush the glaze over the meatloaf bites.
- Bake Again: Return to the oven and bake for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
- Serve & Enjoy: Let the meatloaf bites rest for a few minutes before serving. Enjoy with your favorite dipping sauce or sides!
