Cheesy Stuffed Flatbread

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 3 tablespoons yogurt (plain or Greek)
  • 1/2 cup water (adjust as needed)
  • 1 tablespoon olive oil
  • 1 1/2 cups shredded cheese (mozzarella, cheddar, or a blend)
  • Optional fillings: chopped herbs, minced garlic, or crumbled feta

Instructions

  1. Prepare the Dough:
In a large mixing bowl, combine the flour, salt, sugar, and baking powder. Add the yogurt and mix. Gradually pour in the water while kneading to form a soft, pliable dough. Drizzle the olive oil over the dough and knead until smooth. Cover and let it rest for 20 minutes.
  2. Prepare the Filling:
In a small bowl, combine the shredded cheese and any optional ingredients (herbs, garlic, or feta). Set aside.
  3. Assemble the Flatbreads:
Divide the dough into 6 equal portions. Roll each piece into a small circle (about 6 inches in diameter). Place a generous amount of the cheese filling in the center. Fold the edges over the filling to seal, then gently roll the stuffed dough into a flat circle.
  4. Cook the Flatbreads:
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with oil or butter. Cook each flatbread for 2–3 minutes per side, until golden brown and crispy, and the cheese inside is melted.
  5. Serve:
Serve warm with a dipping sauce of your choice, such as marinara, garlic butter, or tzatziki.
