Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare the potatoes: Thinly slice the peeled potatoes (about 1/8-inch thick) using a mandoline or a sharp knife. Set aside.
  3. Make the cheese sauce: In a medium saucepan, melt butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant. Whisk in the flour and cook for 1-2 minutes, stirring constantly to form a roux.

  7. Top with more cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
  8. Bake: Cover the dish with foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden and bubbly.
