- 1 cup shredded Mexican blend cheese
- 4 large flour tortillas (burrito size)
- 4 medium flour tortillas (quesadilla size)
- 2 tbsp butter (for toasting)
Instructions
- Cook the Beef:
- In a skillet, cook ground beef over medium heat until browned.
- Drain excess fat, stir in taco seasoning and a splash of water, and cook until thickened.
- Prepare the Rice:
- In a small pan, melt butter, add rice, and season with 1 tbsp taco seasoning. Mix well and keep warm.
- Make the Quesadilla Layer:
- On a skillet, place a medium tortilla.
- Sprinkle with shredded Mexican blend cheese, top with another tortilla, and cook until cheese melts.
