Ingredients:
For the Dough:
- 300g (2 1/2 cups) all-purpose flour, plus extra for dusting
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet (7g or 2 1/4 teaspoons) active dry yeast
- 200ml (3/4 cup + 2 tablespoons) warm milk (around 100-110°F or 38-43°C)
- 50g (1/4 cup) unsalted butter, melted
- 1 large egg
For the Potato Filling:
- 300g (about 2 medium) potatoes, peeled and cubed
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- 150g (1 1/2 cups) shredded cheddar cheese (or mozzarella, or a blend)
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain and mash the potatoes with milk, butter, salt, and pepper until smooth.
- Stir in half of the shredded cheese and the chives/green onions (if using). Set aside.
2. Make the Dough:
- In a large bowl, whisk together the flour, salt, and sugar.
- In a separate small bowl, dissolve the yeast in warm milk and let it sit for 5-10 minutes until foamy.
- Add the foamy yeast mixture, melted butter, and egg to the dry ingredients.
- Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
3. Assemble the Bread:
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Once the dough has doubled, punch it down and turn it out onto a lightly floured surface.
- Roll the dough into a rectangle, approximately 12×16 inches.
- Spread the potato filling evenly over the dough, leaving a small border.
- sprinkle the remainder of the shredded cheese ontop of the potato filling.
- Roll the dough up tightly from the long edge, like a jelly roll.
- Cut the roll in half length wise, then carefully twist the two halfs together, so that the layers of potato and cheese are visable.
- Carefully place the twisted loaf onto the prepared baking sheet.
- cover and let rest for another 20 minutes.
4. Bake:
- Bake the bread for 25-30 minutes, or until golden brown and cooked through.
- Let it cool slightly before slicing and serving.

- For a spicier kick, add some red pepper flakes to the potato filling.
- Try using different types of cheese, such as Gruyère or pepper jack.
- You may also brush the top of the bread with an egg wash before baking to create a more golden crust.
