Cheesy Potato Swirl Bread Recipe

This soft and savory bread is packed with creamy mashed potatoes and gooey melted cheese, swirled throughout for a delightful texture and flavor. Perfect for snacking, sandwiches, or as a side with your favorite meal.

Ingredients:

For the Dough:

  • 300g (2 1/2 cups) all-purpose flour, plus extra for dusting
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (7g or 2 1/4 teaspoons) active dry yeast
  • 200ml (3/4 cup + 2 tablespoons) warm milk (around 100-110°F or 38-43°C)
  • 50g (1/4 cup) unsalted butter, melted
  • 1 large egg

For the Potato Filling:

  • 300g (about 2 medium) potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 150g (1 1/2 cups) shredded cheddar cheese (or mozzarella, or a blend)
  • Boil the potatoes in salted water until tender, about 15-20 minutes.
  • Drain and mash the potatoes with milk, butter, salt, and pepper until smooth.
  • Stir in half of the shredded cheese and the chives/green onions (if using). Set aside.

2. Make the Dough:

  • In a large bowl, whisk together the flour, salt, and sugar.
  • In a separate small bowl, dissolve the yeast in warm milk and let it sit for 5-10 minutes until foamy.
  • Add the foamy yeast mixture, melted butter, and egg to the dry ingredients.
  • Mix until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.  

3. Assemble the Bread:

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • Once the dough has doubled, punch it down and turn it out onto a lightly floured surface.
  • Roll the dough into a rectangle, approximately 12×16 inches.
  • Spread the potato filling evenly over the dough, leaving a small border.
  • sprinkle the remainder of the shredded cheese ontop of the potato filling.
  • Roll the dough up tightly from the long edge, like a jelly roll.
  • Cut the roll in half length wise, then carefully twist the two halfs together, so that the layers of potato and cheese are visable.
  • Carefully place the twisted loaf onto the prepared baking sheet.
  • cover and let rest for another 20 minutes.

4. Bake:

  • Bake the bread for 25-30 minutes, or until golden brown and cooked through.
  • Let it cool slightly before slicing and serving.

Tips and Variations:

  • For a spicier kick, add some red pepper flakes to the potato filling.
  • Try using different types of cheese, such as Gruyère or pepper jack.
  • You may also brush the top of the bread with an egg wash before baking to create a more golden crust.
  • Allow the bread to fully cool before slicing, for cleaner slices.
  • Garlic powder can also be added into the potato mix for extra flavor.
