1 cup shredded cheese (cheddar or your preferred cheese)
1/2 cup breadcrumbs
1/4 cup finely chopped green onions or chives
1 egg (beaten)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
2 tablespoons flour (for binding)
1/2 cup oil (for frying)
Instructions
Prep the Potatoes: Begin by peeling and boiling the potatoes until they are soft and tender (about 15 minutes). Drain well and mash them in a large mixing bowl.
Mix the Ingredients: To the mashed potatoes, add the shredded cheese, breadcrumbs, green onions, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined.
Form the Patties: Add the beaten egg and flour to the mixture and stir until the mixture becomes firm enough to form into patties. Shape the mixture into small, round patties (about 1/2 inch thick).
Fry the Patties: Heat oil in a large frying pan over medium heat. Once the oil is hot, carefully place the patties in the pan and fry for 3-4 minutes on each side, or until golden brown and crispy.
Drain the Patties: Remove the patties from the pan and place them on a paper towel to absorb any excess oil.
Serve: Serve your cheesy potato patties hot, with a side of sour cream, ketchup, or your favorite dipping sauce. Enjoy!
