These Cheesy Potato Balls are a delicious and comforting appetizer or snack made from mashed potatoes filled with melted cheese and often coated with breadcrumbs or a crispy exterior. They are typically baked or fried until golden brown and gooey on the inside. These bite-sized treats are perfect for parties or as a satisfying side dish.
Ingredients:
- 2 cups mashed potatoes (cold, leftover or freshly made)
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/4 cup all-purpose flour (or breadcrumbs)
- 1 egg, lightly beaten
- 2 tablespoons chopped fresh chives or parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt (or to taste, depending on your mashed potatoes)
- 1/4 teaspoon black pepper (or to taste)
- Optional coating: 1/2 cup breadcrumbs (panko or regular), 1/4 cup grated Parmesan cheese
- Cooking oil or cooking spray, for baking or frying
Instructions:
For Baking:
- Combine Ingredients: In a medium bowl, combine the mashed potatoes, half of the shredded cheese, flour (or breadcrumbs), beaten egg, chopped chives or parsley, garlic powder, salt, and pepper. Mix well.
- Shape the Balls: Take about 2 tablespoons of the potato mixture and flatten it slightly in your hand. Place a small amount of the remaining shredded cheese in the center. Bring the edges of the potato mixture together to enclose the cheese, forming a ball. Repeat with the remaining mixture and cheese.
- Prepare Coating (Optional): If using a coating, mix the breadcrumbs and Parmesan cheese in a shallow dish. Roll each potato ball in the coating until evenly covered.
- Preheat Oven: Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- Bake: Place the potato balls on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and heated through.
For Frying:
- Combine Ingredients: Follow step 1 above to combine the ingredients.
- Shape the Balls: Follow step 2 above to shape the potato balls with a cheese filling.
- Prepare Coating (Optional): If using a coating, prepare it as described in step 3 of the baking instructions. Roll each potato ball in the coating.
- Heat Oil: Heat about 2-3 inches of cooking oil in a deep pot or skillet to 350°F (175°C).
- Fry: Carefully drop the potato balls into the hot oil in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy.
- Drain: Remove the fried potato balls with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
Tips and Notes:
- Cheese Variations: Experiment with different cheeses for the filling, such as mozzarella for a good melt or a spicy cheese for a kick.
- Herb Variations: Use your favorite fresh herbs for added flavor.
- Make Ahead: You can prepare the potato balls ahead of time and store them in the refrigerator before baking or frying.
- Serving Suggestions: Serve these cheesy potato balls as an appetizer with a dipping sauce like ranch, marinara, or a creamy garlic sauce. They also make a great side dish.
