INGREDENT
- 2 cups mashed potatoes (cooled)
- 1 cup shredded mozzarella cheese (or cubes for center filling)
- 1/4 cup finely chopped green onions (optional)
- 1/2 tsp garlic powder
- Salt & black pepper to taste
- 1/4 cup all-purpose flour
- 1 egg, beaten
- 1 cup breadcrumbs (panko or regular)
- Oil for frying
Instructions
- In a bowl, combine mashed potatoes, green onions (if using), garlic powder, salt, and pepper. Mix well.
- Take a small portion of the mixture, flatten it in your palm, and place a bit of cheese in the center. Roll it into a ball to enclose the cheese.
- Repeat with the remaining mixture.
- Roll each ball in flour, dip in beaten egg, then coat with breadcrumbs.
- Heat oil in a deep pan over medium heat. Fry the balls in batches until golden brown and crispy.
- Remove and drain on paper towels.
- Serve hot with ketchup, chili sauce, or your favorite dip.
