Ingredients
- 2 large potatoes, peeled and boiled
- 1 lb ground beef (or your choice of meat)
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 2 tablespoons olive oil (for frying)
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Potatoes: Boil the potatoes in salted water until tender (about 10-15 minutes). Drain and mash them in a bowl. Set aside to cool.
- Cook the Meat: In a skillet, heat the olive oil over medium heat. Add the onions and garlic and sauté until softened, about 3-4 minutes. Add the ground beef and cook, breaking it apart with a spoon, until browned. Season with salt, pepper, oregano, and paprika.
- Mix the Potatoes and Meat: Once the meat is cooked, remove it from the heat and let it cool slightly. In a large mixing bowl, combine the mashed potatoes, cooked meat mixture, cheddar cheese, and Parmesan cheese. Mix well until fully combined.
- Form the Rolls: Lay a piece of parchment paper or plastic wrap on a flat surface. Spoon a portion of the potato-meat mixture onto the center and shape it into a roll, like a meatloaf log. Repeat until all the mixture is used.
- Cook the Rolls: In the same skillet, heat a little more olive oil over medium heat. Carefully place the potato-meat rolls in the pan and cook, turning occasionally, until golden and crispy on all sides (about 5-7 minutes per side).
- Serve: Once cooked, remove from the skillet and let them rest for a few minutes before slicing. Garnish with fresh parsley and serve warm.
