- 1½ cups shredded mozzarella cheese
- 2 tbsp cream cheese
- ¾ cup almond flour
- 1 large egg
- ½ tsp Italian seasoning
- ¼ tsp garlic powder
- 16–20 slices of pepperoni
- ½ cup shredded mozzarella (for filling)
- Optional: Low-carb marinara sauce for dipping
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt the mozzarella and cream cheese together in 30-second intervals, stirring between, until fully melted and smooth.
- Add almond flour, egg, Italian seasoning, and garlic powder to the cheese mixture. Mix until a dough forms. If sticky, lightly wet your hands.
- Roll the dough between two sheets of parchment into a rectangle about ¼-inch thick.
- Sprinkle shredded mozzarella evenly over the dough, then layer with pepperoni slices.
- Carefully roll the dough up tightly from one end (like a cinnamon roll) and slice into 1-inch pieces.
- Place roll-ups flat-side down on the baking sheet.
- Bake for 15–18 minutes, or until golden brown and bubbly.
- Serve warm with marinara sauce for dipping (optional but delicious!).
