Ingredients

  • 1½ cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • ¾ cup almond flour
  • 1 large egg
  • ½ tsp Italian seasoning
  • ¼ tsp garlic powder
  • 16–20 slices of pepperoni
  • ½ cup shredded mozzarella (for filling)
  • Optional: Low-carb marinara sauce for dipping

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt the mozzarella and cream cheese together in 30-second intervals, stirring between, until fully melted and smooth.
  3. Add almond flour, egg, Italian seasoning, and garlic powder to the cheese mixture. Mix until a dough forms. If sticky, lightly wet your hands.
  4. Roll the dough between two sheets of parchment into a rectangle about ¼-inch thick.
  5. Sprinkle shredded mozzarella evenly over the dough, then layer with pepperoni slices.
  6. Carefully roll the dough up tightly from one end (like a cinnamon roll) and slice into 1-inch pieces.
  7. Place roll-ups flat-side down on the baking sheet.
  8. Bake for 15–18 minutes, or until golden brown and bubbly.
  9. Serve warm with marinara sauce for dipping (optional but delicious!).
