Cheesy Mozzarella Onion Rings

Ingredients

  • 2 large onions
  • 200g (7 oz) mozzarella cheese block or sticks
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs (panko works best)
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon paprika (optional)
  • Salt & black pepper, to taste
  • Oil, for frying

Instructions

  1. Prepare the onions:
    • Peel and slice onions into ½ inch thick rings. Gently separate the rings.
    • Cut mozzarella into strips that can fit inside the onion rings.
  2. Assemble:
    • Take a large onion ring and place a smaller ring inside it, leaving a gap in between. Fill the gap with mozzarella strips. Press gently to secure.
  3. Coat:
    • Place flour in one bowl, beat eggs in another, and mix breadcrumbs with garlic powder, paprika, salt & pepper in a third bowl.
    • Dredge each stuffed ring in flour, dip in egg, then coat with breadcrumbs. For extra crunch, repeat egg and breadcrumb step.
  4. Freeze:
    • Place the coated rings on a tray and freeze for 30 minutes to help hold shape.
  5. Fry:
    • Heat oil to 350°F (175°C). Fry onion rings in batches until golden and crispy, about 2–3 minutes per side.
  6. Serve:
    • Drain on paper towels, sprinkle with extra salt if desired, and enjoy while hot with your favorite dipping sauce!
