Ingredients
- 2 large onions
- 200g (7 oz) mozzarella cheese block or sticks
- 1 cup all-purpose flour
- 2 eggs
- 1 cup breadcrumbs (panko works best)
- ½ teaspoon garlic powder (optional)
- ½ teaspoon paprika (optional)
- Salt & black pepper, to taste
- Oil, for frying
Instructions
- Prepare the onions:
- Peel and slice onions into ½ inch thick rings. Gently separate the rings.
- Cut mozzarella into strips that can fit inside the onion rings.
- Assemble:
- Take a large onion ring and place a smaller ring inside it, leaving a gap in between. Fill the gap with mozzarella strips. Press gently to secure.
- Coat:
- Place flour in one bowl, beat eggs in another, and mix breadcrumbs with garlic powder, paprika, salt & pepper in a third bowl.
- Dredge each stuffed ring in flour, dip in egg, then coat with breadcrumbs. For extra crunch, repeat egg and breadcrumb step.
- Freeze:
- Place the coated rings on a tray and freeze for 30 minutes to help hold shape.
- Fry:
- Heat oil to 350°F (175°C). Fry onion rings in batches until golden and crispy, about 2–3 minutes per side.
- Serve:
- Drain on paper towels, sprinkle with extra salt if desired, and enjoy while hot with your favorite dipping sauce!
