- 3 cups mashed potatoes (leftover or freshly made)

- 2 large eggs

- Preheat oven to 400°F (200°C). Lightly grease a muffin tin or mini muffin tin.
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, sour cream, green onions, garlic powder, salt, and pepper.
- Mix until everything is well combined and smooth.
- Spoon the mixture evenly into the muffin tin cups, filling each about ¾ full.
- Brush the tops lightly with melted butter for extra crispiness.
- Bake for 20–25 minutes, or until golden brown on top and slightly crispy around the edges.
- Let cool for 5 minutes, then carefully remove from the pan.
- Serve warm and enjoy the cheesy goodness!
