- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup chopped green onions or chives
- 1/4 cup sour cream
- Salt and black pepper, to taste
- 1/2 teaspoon garlic powder (optional)
- Butter or cooking spray (for greasing muffin tin)
Instructions
- Preheat oven to 400°F (200°C). Grease a muffin tin with butter or non-stick spray.
- In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, sour cream, and green onions. Add salt, pepper, and garlic powder if using. Mix until fully incorporated.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 25–30 minutes, or until the tops are golden brown and slightly crispy.
- Let cool for 5 minutes before gently removing from the tin.
- Serve warm with sour cream or your favorite dipping sauce.
