Cheesy Mashed Potato Puffs

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped green onions or chives
  • 1/4 cup sour cream
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • Butter or cooking spray (for greasing muffin tin)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a muffin tin with butter or non-stick spray.
  2. In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, sour cream, and green onions. Add salt, pepper, and garlic powder if using. Mix until fully incorporated.
  3. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake for 25–30 minutes, or until the tops are golden brown and slightly crispy.
  5. Let cool for 5 minutes before gently removing from the tin.
  6. Serve warm with sour cream or your favorite dipping sauce.
